Its delicious, slightly salty taste and its changing colours are the typical characteristics of this variety, which grows in a small area of Puglia. These olives have a uniform structure that is best appreciated if placed in brine.


Good to be eaten with fresh goat’s milk cheese to flavour pizzas, focaccia and salads.
Excellent paired with white DOC wine. serving temperature: 10-12°C.
