Olive nere al forno

A treat, a preserve, an appetiser, something to munch on alone or in company that reflects the desire to always have something ready to offer to guests or to enjoy in peace and quiet.


The olives should be fully ripe; pit and wash them thoroughly, then arrange them in layers with salt for 5-7 days to let the vegetation water drain out. After this process, rinse the olives with cold white vinegar. Place baking paper on a baking tray and brush it with a little oil, then place a layer of olives. Bake them in a preheated oven at 150°C, until the olives are wrinkled.
Finally, place them in jars with extra virgin olive oil.
